The characteristic of Wagyu JB grab is the softness of leather. This is a characteristic of Japanese black beef from Miyazaki prefecture.
Normally, Japanese cows have thin skin and fat even on the front side of the skin, which makes the meat tender.
However, because of its thin skin and high amount of fat, it is difficult to process it into leather for grabs, and foreign-made leather is used exclusively for grabs.
In order to turn its weaknesses into strengths, Ball Park commissioned a leading tanner to perform the "tanning" process. With its first-class arms, it is no exaggeration to say that it is the best leather in Japan.
